Ingredients
1 1/2 cups of fresh mint leaves
3 1/4 cups water
1/2 teaspoon lemon juice
1 package of pectin
3 1/2 cups sugar
Green food coloring (optional)
Preparation
Step 1
Collect your mint leaves and roughly chop to measure. You should pack leaves tightly to measure.
Step 2
In a pot add 3 1/4 cups water and your mint leaves. Bring to a rapid boil. Once you've brought it to a rapid boil remove from heat, cover, and let sit for 10 minutes. After the 10 minutes is up you'll need to strain and measure out three cups of liquid. Pour your liquid back into your pot.
Step 3
Add lemon juice and a few drops of green food coloring (optional) and whisk in pectin. You'll need to bring the mixture back to a full rolling boil and then whisk in the sugar. Boil mixture for an additional two minutes while stirring constantly.
Step 4
After the two minutes is up ladle your mint jelly into clean and sanitized jars leaving a 1/4 inch headspace. Wipe rims of jars with a clean damp papertowel before adding lids and rims. Waterbath for 10 minutes. After removing your jars leave alone for 24 hours. Any jars that do not seal should be refrigerated for first use.
