2 cups pureed watermelon
1/4 cup lemon juice
2 cups granulatedwhite sugar
6 TBSP powdered pectin
Put pureed watermelon, lemon juice, and sugar in a pot. Bring to a rolling boil then reduce the heat to a simmer.
Add pectin and stir with a whisk or fork immediately to avoid clumping.
Bring the mixture to a boil again then reduce to a simmer for 20 minutes. Stir often!
Place your prepared watermelon jelly into clean and sanitized jars leaving a 1/2 inch head space. Wipe rims of jars with a clean damp papertowel before placing on your lids and rings. Waterbath for 10 minutes. After removing jars from waterbath you should leave them alone for 24 hours. Any jars that arent sealed should be refrigerated for first use.
